Syllabus: | Bioavailability of selected vitamins and minerals. Function, absorption, transport, retention and excretion of trace and ultratrace elements. Nutrient - nutrient interactions. Role of trace and ultratrace elements in antioxidant protection. Vitamin and mineral supplementation - hazards and appropriate uses. Investigation into foods for which sensational claims are made. |

Unit Outcomes: | On successful completion of this unit, students will be able to- Demonstrate basic knowledge of trace and ultratrace elements. Demonstrate an understanding of nutrient-nutrient interactions and other factors affecting the bioavailability of nutrients. Appreciate the hazards and benefits of vitamin and mineral supplementation. Demonstrate an understanding of the role of trace and ultratrace elements in (a) coordinated system of antioxidant protection. |
