Syllabus:

Introduction to food sources and metabolic functions of carbohydrates, lipids, proteins, vitamins and minerals, recommended dietary intakes for these nutrients. Background on nutritional standards of reference. Collection, analysis and evaluation of food intake data.
 

Unit Outcomes:

On successful completion of this unit, students will be able to - Understand the basic function, public health significance and food sources of carbohydrates, lipids, proteins, vitamins and minerals. Demonstrate knowledge of the nutrition reference standards used in Australia, in particular food composition tables and Recommended Dietary Intakes. Demonstrate basic knowledge of nutritional status methods. Analyse and evaluate dietary intakes using tables of food composition and computer-based diet analysis programs.
