Syllabus: Production of sparkling wines, fortified wines and distillation of spirits. Alternative wine styles and emerging varieties. Beer production. Label integrity program (LIP); wine and health. This unit focuses on alternative end-uses for traditional and emerging grape varieties and informs the pre-harvest decisions such as which variety selection and growing conditions suited to these.
