The ecology, biochemistry, isolation, enumeration and identification of bacteria, yeasts, fungi and viruses associated with foods. Food spoilage, food borne microbial disease, food fermentations, microbiological examination of foods and microbiological quality control. Introduction to biotechnology and its application in food production and processing. |
