Grape and juice composition including flavour precursor, acidity, phenolics, preservatives and anti-oxidants, glycolysis, fermentation, fermentation dynamics, selection of yeast, byproducts of fermentation, yeast nutrition, malo-lactic fermentation, microbial spoilage of wine, enzymes in winemaking.
