Syllabus: | Explore secondary plant metabolites in fruits, vegetables and grain crops and understand their role in improving colour, flavour, aroma, nutritional and functional properties. Biotic and abiotic factors that affect secondary metabolism will be discussed in order to understand the implications and regulation of these biochemical processes on fruit colour and flavour, aroma development, antioxidant and other properties. |
