Syllabus: | This unit introduces students to the principles of food service and management in dietetics, with a focus on large scale food service for nutritionally dependent clients. Students will gain knowledge and practical skills in food service management including food service systems; role of the dietitian in food service; menu assessment and planning; recipe development and modification; catering for special diets; food safety and technology; quality improvement; management and leadership in dietetics. |
