Syllabus: | An introduction to sensory evaluation, sensory statistics and the olfactory system. Students learn how to create professional wine tasting notes with appropriate vocabulary including colour, aroma and taste attributes. Organoleptic assessment of Australian red and white wine styles, focusing on regionality, wine faults, wine scoring and production techniques. This unit enables students to evaluate wine based on quality, grape variety and the impact of different vineyard regions in determining wine style. |
