| Syllabus: | This laboratory science unit introduces you to processes used to transform food ingredients, make food safe for consumption, extend shelf life, and minimise impact on sensory and nutritional quality. Learn about the importance of raw material quality and how this affects processing and end product quality. Quality attributes which are measured to monitor and assess changes to raw materials and food products, and food regulation are also discussed. |
