Syllabus: | This unit provides both a theoretical and practical application of brewing concepts, and the production of beer from a small scale microbrewery. Sparkling wine production and a sensory assessment of sparkling wine styles are examined. Distillation theory, the production of Cognac, Whiskey and other spirits and a practical application of distillation theory is demonstrated. The production of Portuguese port and fortified wine styles and the production of Spanish Sherry and Australian fortified white wine styles are explored. |
