Syllabus: A broad approach to the principles of production and postharvest handling, processing and marketing of olive products. Olive industry, tree physiology, flowering, pollination, fruit set and development of olives. Propagation, cultivars, orchard establishment and management. Pests and disease control. Nutrition, irrigation management harvesting and processing. Economic analysis and marketing of olive products.
