An introduction to modern nutrition science. Nutritional profile of Australians. Determinants of dietary behaviour. The Australian food system. Nutrient requirements and RDIs. Assessment of nutritional status. Trends in consumption patterns. Nutrition in developing countries. World food supply. Vitamin A, iron and iodine deficiency in developing countries. Role of nutrition in cardiovascular disease, cancer, obesity, diabetes and osteoporosis. Food safety and technology.
